Lauki ka Raita – Bottle Gourd with Yogurt

Lauki also called bottle gaurd is one of the most healthy vegetable, it can be consumed in many forms like it's sanzi or it's juice too but having it with yogurt is not only super healthy but also it tastes delicious and you don' need addition meal with it, you can have it with rice or chapati or just by itself.
It's refreshing and highly recommended for health conscious people.

  • 1 cup of bottle gourd grated
  • 2 cups of fresh yogurt
  • 2 teaspoon cooking oil
  • 1 teaspoon cumin seeds
  • pinch of asafetida
  • 2-3 teaspoon of coriander (finely chopped)
  • 1 green chili
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of finely chopped ginger
  • salt to taste
Method :
  • heat the oil in a saucepan
  • meanwhile whip the yogurt into smooth consistency
  • Add cumin seeds and asafetida into the hot oil, once cumin sees splitter add copped green chillies
  • then add ginger till the raw smell of ginger is gone
  • then add grated bottle gourd into add and keep stirring until it becomes nice and soft
  • then switch off the flame
 Once lauki is chilled, add it to the yogurt and whisk It well again then put in refrigerator for 20 minutes.
